FISHLESS FILET

THE DISH: These fishless filets don’t have to be on burger buns, but can also make for fish & chips or other boardwalk favorites.

TARTAR SAUCE RECIPE

1 cup aquafaba

3 tablespoons lemon juice

1 teaspoon sugar + salt + pepper

~1¼ cups tapioca powder

3 cups oil

¼ cup diced pickles

¼ cup diced red onion

zest of 1 lemon

TARTAR SAUCE CHEFFING INSTRUCTIONS

•Add aquafaba, lemon juice, sugar, salt, pepper, tapioca flour, and oil to blender and blend thoroughly until resembles creamy mayonnaise.

•Add diced pickles, onion, and lemon zest to blender slowly until mixed.
